I was at the farmer's market on Sunday and saw these delicious pea shoots. Here is my favorite way to cook them.
1 tablespoon neutral oil such as grapeseed, canola or peanut
2 garlic cloves, sliced
Pinch of red pepper flakes
Bunch of pea shoots (8-10 oz)
Kosher Salt
Freshly ground black pepper
Pre-heat wok over high heat for 5 minutes until smoking. Add oil. Once smoking add red pepper flakes and stir quickly for about 30 seconds. Do not burn. Add pea shoots and stir fry until slightly wilted. Add garlic and stir fry for about 30 more seconds so as not to burn. Season to taste with Kosher salt and freshly ground black pepper.
