1 head of broccoli cut into florets and small pieces of tender stems
Neutral oil such as peanut or grapeseed
2 garlic cloves, chopped
1 tablespoon chopped fresh ginger
Kosher salt
1 tablespoon soy sauce, preferably light soy sauce
1 teaspoon toasted sesame oil
Freshly ground black pepper
Blanch broccoli in salted boiling water for 3 minutes. Drain and place in a bowl of ice water until cool. Dry broccoli.
Heat a wok on high for 5 minutes. Add a tablespoon of the oil. Add the garlic and ginger and cook for a few seconds. Add the broccoli, season with Kosher salt, and cook for a few minutes until warm and just starting to brown. Add soy sauce and toasted sesame oil and cook for one minute. Season with freshly ground black pepper.
