This is a very simple and fast recipe that is also quite flavorful and light.
1 1/2 lbs halibut, skinned and cut into 1" chunks
2 tablespoons soy sauce
4 scallions, cut into small slices, whites and greens divided
1" ginger, peeled and sliced into matchsticks
Kosher salt
serves 3-4
Combine 1 cup water with 1 tablespoon kosher salt. Stir to dissolve salt. Place halibut in this liquid brine for 10 minutes.
Combine 1/2 cup water, scallions whites, ginger and soy sauce in a lidded skillet that can hold fish without overlapping. Bring to a boil and lower the heat to simmer for 5 minutes until reduced.
Add halibut to the skillet and toss to cover in sauce. Spread halibut out into one layer. Cover and simmer for 6-8 minutes until cooked (you should be able to flake the fish with a fork).
Transfer halibut to a platter with the sauce. Top with scallion greens.
I like to serve the halibut with white rice and a green vegetable such as steamed or seared broccoli or roasted Brussels sprouts.
