Sole with Lemon, Garlic and Parsley

This has an extra lemon punch - I love it!





1 lemon

2 garlic cloves

1 tablespoon chopped parsley

Extra virgin olive oil

1 lb fillet of sole

Kosher salt

Freshly ground black pepper


Pre-heat broiler to high. Line a baking sheet with foil. Pour a few tablespoon of oil onto the baking sheet. Take each sole fillet and cover on both sides in the oil. Place sole top side up. Season to taste with salt and pepper.


Zest lemon over fillets. Then juice lemon into a bowl. Grate the garlic into the lemon juice, add the parsley and stir to combine. Pour over sole.


Broil sole for 4 minutes.


I like to serve with sauted asparagus and pasta.
