Sole with Capers



Fillet of sole (1-2 fillets/person)

Extra virgin olive oil

Kosher salt

Freshly ground black pepper

Capers, chopped

Lemon


Pre-heat broiler on high.


Line a sheet pan with foil. Pour a few tablespoons of extra virgin olive oil on the foil. Take each fillet of sole and wipe in through the oil on both sides, arranging all fillets top side up on the foil. Season each fillet with Kosher salt, freshly ground black pepper, chopped capers and lemon zest.


Broil fish for 4 minutes, or until it flakes with a fork.


Serve with lemon wedges or top with lemon juice.
