Sole a la Francaise

This is a very flavorful fillet of sole with a combination of saltly and tangy flavors.



3/4 lb fillet of sole


For the spice rub:

1/4 teaspoon Kosher salt

1/4 teaspoon sweet paprika

1/4 teaaspoon garlic powder


For the salsa:

2 tablespoons lime juice

2 tablespoons extra virgin olive oil

1 shallot, thinly sliced

2 garlic cloves, thinly sliced

3 scallions, thinly sliced

1/2 teaspoon Kosher salt

1/4 teaspoon freshly ground black pepper


Chopped dill.


Line a sheet pan with foil, Place fillet of sole on pan.


Mix the Kosher salt, sweet paprika and garlic powder together. Sprinkle of fillet of sole.


Combine all sals ingredients and spoon over sole.



Pre-heat oven on broil for 5 minutes. Broil sole for 4 minutes.


Remove from oven and sprinkle with dill.
