Sauteed Shiitake Mushrooms




Serves 2, can multiply


5 oz shiitake mushrooms, sliced

1 shallot, finely diced

Extra virgin olive oil

pinch of red pepper flakes

1 Tablespoon chopped chives

Kosher salt

Freshly ground black pepper

Splash of soy sauce


Heat skillet over medium high heat. Add extra virgin olive oil. Add shallots and season with salt. Saute until starting to soften, 2-3 minutes. Add red pepper flakes and mushrooms and do not stir for 2 minutes to crisp. Then toss and cook until mushrooms brown and soften. Season with salt and pepper. Add soy sauce. Remove from heat and sprinkle with chives.
