This is so simple -- all you need are good tomatoes, extra virgin olive oil and salt!
Heirloom tomatoes (I love yellow ones because they are less acidic but a blend of colors is nice too)
Extra virgin olive oil (this is the time to use your best)
Flaky sea salt (such as Maldon or Fleur de Sel)
Wash and slice tomatoes (about 1/4" slices). Place on a platter. Drizzle with extra virgin olive oil and sprinkle with flaky sea salt. Allow to rest at least 10 minutes before eating.
