One of my favorite recipes is to make chocolate chip cookies in brownie form. All of my children have requested these for their birthdays -- especially my son, David, who prefers brownies to cakes. We named the brownies after my twins, Elizabeth and Harry. And, actually, they are really blondies. Go figure!
Elizabeth and Harry's Happy Birthday Brownies
1 lb butter
1 ½ cups dark brown sugar
1 ½ cups sugar
1 tablespoon vanilla
4 eggs
4 cups flour
2 teaspoons baking soda
2 cups chocolate chips (or other type of chips)
Preheat oven to 325 F convection.
Melt butter in saucepan.
In bowl, combine brown sugar and sugar. Add melted butter and mix well. Mix in vanilla, and then eggs one at a time, mixing well after each addition. Mix in flour and baking soda. Mix in chips.
Pour into 9 x 13 inch baking pan. Bake for 30 minutes.
