Note: if you don't want to grill, you can also bake the chicken breasts with the marinade in a square pan at 400 F convection (425 F) for 20-25 minutes until chicken is done/registers 165 F. Then proceed with the recipe.
Serves 4
2 lbs boneless, skinless chicken breasts
2 tablespoons lime juice
1 tablespoon orange juice
1/4 cup chopped fresh cilantro (leaves and tender stems)
3 tablespoons extra virgin olive oil
2 garlic cloves, grated
1/2 teaspoon crushed red pepper flakes
1 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
Cilantro sprigs and lime wedges, optional
Combine all ingredients except for chicken and whisk to combine. Add chicken breasts and marinate in the refrigerator for up to a day. If you only have a short time to marinate (1 hour or less), leave out of the refrigerator.
Take chicken out of refrigerator 1 hour before you want to grill. Grill chicken. Allow to rest on a cutting board for 10 minutes. Slice against the grain and serve with cilantro sprigs and limes wedges, if desired.
