I saw some amazing green tomatoes at the farmers' market and made these for my boys.
2 green tomatoes, sliced into 1/4" pieces
1/2 cup flour (60g)
1/2 teaspoon sweet paprika
1/2 teaspoon dried thyme
1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
1 egg
1/4 cup cold water
1/2 cup cornmeal
Vegetable or peanut oil
On a plate, combine flour, paprika, thyme, Kosher salt, black pepper and cayenne. Whisk well.
In a bowl, combine egg and water. Whisk well.
Place cornmeal on a second plate.
Set up a wire rack over a sheet pan. With your left hand, take a tomato slice and rub both sides in flour. Add tomato to egg mixture and use right hand to cover it with the egg wash. Then hold over bowl to allow to drain. Place tomato on cornmeal and use left hand to cover both sides. Place on wire rack. Repeat with all slices.
Heal a nonstick pan filled with 1/4" oil over medium high. When the oil shimmers, fry the tomatoes on both sides until golden brown. Place tomatoes back on the wire rack to drain excess oil.
