I love coffee icing and I could not find a recipe for it (this was pre-internet/world wide web), so I developed this yummy frosting. It is enough to frost two nine inch cake layers. It is especially delicious on the "Wine Cake" (see recipe for this on my blog).
1/2 cup butter
1 2/3 cups confectioner's sugar
3 tablespoons strong coffee (I usually use instant dissolved in hot water or expresso)
1 teaspoon vanilla extract or rum.
Beat butter until smooth and fluffy. Add confectioner's sugar gradually. Blend until creamy. Add coffee and beat for two minutes. When cool, add vanilla extract or rum.
To make mocha frosting, add 1 tablespoon unsweetened cocoa powder and use only 1/2 teaspoon vanilla extract.
