Broiled Flounder with Shallot and Lemon

This summer I have been lucky to find very thin, delicate flounder fillets. They are delicious and cook in about 4 minutes so they are a great way to get dinner on the table quickly. Flounder is in the same family/can also be called sole and fluke.


Flounder fillets (I make about 6 oz/person)

Extra virgin olive oil

Kosher Salt

Freshly ground black pepper

Sweet paprika

Shallot, thinly sliced

Lemon, zest and juice


Pre-heat the broiler.


Line a sheet pan with foil and pour on some extra virgin olive oil. take each flounder fillet and rub back and front with the oil, placing the fillet front side up on the pan. Season the flounder with salt and pepper. Sprinkle with sweet paprika and lemon zest. Place shallots on top.


Broil for about 4 minutes until you can flake the fish with a fork.


Remove from oven and sprinkle with lemon juice. Serve.
