Basil, Lemon and Garlic Roast Chicken

I love how fresh this tastes with the combo of basil and lemon.


Serves 4


1 tablespoon lemon zest

1/4 cup lemon juice

1/4 cup extra virgin olive oil

Handful of basil leaves

2 garlic cloves

1 teaspoon Kosher salt

1/2 teaspoon freshly ground black pepper

2 lbs boneless skinless chicken breast cut into 1-2" pieces


Combine all ingredients except for chicken in a mini food processor and puree until well blended. Pour into a bowl and add chicken. Toss to coat chicken evenly and refrigerate if you will be cooking in more than one hour (otherwise leave out to marinate).


Pre-heat oven to 425 F convection (450 F). Roast chicken for 15 minutes.
